Matzo Ball Soup from Julie Kaufman

This recipe was give to Julie from her sister in law, who is Jewish.  

2 chickens, quartered

2-3 onions, whole

baby carrots (Okay, modernized!)

salt, pepper, water


Bring everything to a boil , with enough water to almost fill the stock pot. Reduce to simmer for 2 hours. Strain the vegetables, meat and bones.  Return carrots and celery to pot to serve.
