By far the best recipe ever tasted:
3 eggs
2 cups sugar
1 cup oil
1 t vanilla
2 cups grated Zucchini
1 cup chopped nuts
1 t. cinnamon
1 t. salt
1 t. baking soda
1 t. baking powder
1/2 cup sour cream
1 t. lemon peel, optional
Grease 2 (9x5”) loaf pans or 5 (3.5x5”) loaf pans. Sift flour in large bowl.
Beat eggs and add the rest of the ingredients to the flour.
Mix well, make sure all zucchini and flour are mixed into the batter. Mix for several minutes.
Pour into greased pans. Bake in a preheated 350 degree oven. Let cool in pans.
Bake 9x5” pans for 1 hour and 20 minutes. Bake the 3.5x5” pans for 50 minutes
